I use the Uber Map for directions to the passengers destination, is that fine or should I use another like Scout, or Google Maps?

The most important reason people chose Google Maps is: You can download offline data per city or parts of cities if you live in an especially large city, but not for states or countries. Points of Interests are generally more relevant & current than the typical stand alone GPS unit.
Scout gives you the flexibility of both a list of potential places and a structured itinerary. For example, you can add a bunch of restaurants you may want to go to and decide at lunch time based on how you're feeling. But you can also create an itinerary with specific attractions you know you'll visit.
Second, I love maps and find it very useful for planning so we made it huge. We take a map first approach.
Uber doesn't have its own map system, it is using data providing by Google. You are essentially using Google Maps.
You could use something else but there really isn't anything better.
Google maps is the best. They have the most coverage and placement of businesses, homes, and addresses. They have people drive and take pictures for them so they are very reliable.
As mentioned, Uber is using Google Maps which is the best of the bunch. You don't have to use it through their app though, you can just use the app by itself if that makes things easier for you. That is what I do.
